Reporting to the Executive Chef, the incumbent will assist in managing multiple aspects of the kitchen operation as per operational requirements (tasks very from unit to unit).
Relevant Hotel School qualification.
Diploma in Hospitality Management/culinary an advantage.
Minimum 7 years experience in culinary industry.
Skills and Knowledge
Knowledge of kitchen hygiene
Positive thinking and a helpful attitude towards fellow employees and guests
Good verbal and written skills English skills
Key Performance Areas:
Ensure food standards meet grading requirements and consumer needs.
Menu susggestions are made to reflect current trends in line with property identity and target market.
To ensure safe working conditions for all personnel in the kitchen
To ensure that all maintenance requirements are reported and recorded daily
To be responsible for all deliveries, ensuring that they are checked properly with an emphasis on quality, quantity and priced as per agreement
To ensure minimum wastage within the division
To ensure the correct staffing of the kitchen department
To ensure a fast and efficient service to the guests
To forward creative ideas for new dishes, more attractive presentations ,
Food promotions etc. to enhance the cooking experience and menu
Recommend changes in systems and procedures to increase efficiency and to improve service
